This cookie recipe is colorful as well as yummy. It involves chocolate shortbread cookies and white shortbread cookies sandwiched together with red jam or jelly in the middle.
Since you use a cookie cutter to cut the
Black and White Shortbread Cookies, you can cut the cookies to suit any holiday, celebration or event. Cut them with a shamrock and you have a great St. Patrick's Day cookie. For St. Paddy's Day, you could substitute the red filling with green icing if you wanted.
They're fine as they are for Valentine's Day or Christmas, cut with heart shaped cutters or Christmas themed cutters.
For Easter, you could use egg shaped cutters or bunny cutters or lamb cutters, and fill with a yellow icing or perhaps lemon filling.
For Halloween, use pumpkin or ghost shaped cutters. The red jelly filling would work okay, or you could use something orange colored.
